Friends Salad


The “Jennifer Aniston Salad”  
We modified this one just a bit to make it gluten friendly. Allegedly, this is what JA ate daily on the set of Friends. 
Quinoa (we subbed this for bulgur wheat), tiny diced cucumber and red onion, chick peas (we are roasting them for extra flavor and crunch), parsley, mint, feta, and a simple dressing with olive oil and fresh lemon juice.
