Sneaky Meatloaf (Serves 1 or 4)

Let’s call it our secret. We start with the usual - lean ground beef, carrots, celery, onions, Panko breadcrumbs - but you know we had to sneak in some veggies. We use riced cauliflower and broccoli in this one. Your kids will never taste it and they likely won’t see it either.

Topped with a chunky tomato gravy and served with buttery mashed potatoes.
