Mediterranean Pasta Salad (Serves 2-3)


Mediterranean inspired and meatless. Rotini, feta cheese, Kalamata olives, red onions, cucumbers, tomatoes, and chickpeas are tossed in a tangy feta vinaigrette. Delicious as a lunch entrée and also makes a great side to serve with a larger meal. Add a side of chicken to increase the protein.

Protein Details (serves 1, protein packaged separately):
CHICKEN: 4 oz of sliced perfectly cooked herb marinated chicken breast 
SHRIMP: 5 U25 tail on shrimp, marinated and then roasted
