This dish is inspired by our family’s favorite hole in the wall cheesesteak shop. Whole beef roast is cooked sous vide to lock in flavor without losing moisture, then seared on the flat top to caramelize it for color, flavor, and texture. Finally , we slice it really thin on the commercial meat slicer in our kitchen.

Kit includes: 1 pound of beef, 4 baguettes, 4 slices of American cheese, a half pint of au jus.
